Local Bite: Apfelpfannkuchen Preheat the oven to 475F. Blend flour, sugar, salt, eggs, half and half, and vanilla until smooth. In a ten-inch oven-proof sauce pan, melt butter, brown sugar, cinnamon and nutmeg together on medium heat (be careful not to burn the butter.) Once the butter has melted, add the apples and saute until caramelized and brown (at least ten minutes, once the juices have released and reduced.) Pour the batter on top of the apples and put the pan in the oven. Bake for 15-18 minutes until the top is light brown and puffed.*Apfelpfannkuchen is German for apple pancake, and is more commonly referred to as a “Dutch Baby” or “Apple Baby” in the United States! **This recipe is courtesy of epicurious.com, but has been approved by Ron Van Dijk, who said “it looks like my wife’s recipe!”
-1/2 cup flour -1 tbsp granulated sugar -1/2 tsp salt -2 eggs -2/3 cups half and half -1 tsp vanilla extract -2 tbsp butter -4 Granny Smith or Gala Apples (cored, peeled, cut into 1/4″ slices, and toss with 1 tsp of lemon juice) -1/4 cup of brown sugar -1 tsp cinnamon -A pinch of nutmeg
