Strawberry Chicken Salad

Serves: 6


  • 4 C. grilled chicken
  • 3/4 C. chopped celery
  • 1/3 C. mayonnaise
  • 2 T. lemon juice
  • 1 T. minced fresh mint
  • 3/4 t. salt
  • 1/8 t. pepper
  • 2 C. sliced fresh strawberries
  • 1/3 C. slivered almonds (toasted)
  • 1 can of madarin oranges


In a bowl, combine the chicken and celery. In a small bowl, combine the mayonnaise, lemon juice, mint, salt and pepper. Pour the mayonnaise mix over the chicken and toss. If you’re not serving immediately, refrigerate. If you are serving immediately, fold in the strawberries, oranges and almonds. Serve and enjoy!

*This salad is part of our favorite “on the trail” lunch that we prepare on our US trips! After a hike or bike ride, this salad really hits the spot!
