Mixed Berry Popsicles

What’s more fun than making a frozen treat alongside your children in the summer heat? These fresh berry popsicles are easy-peasy and fun to make. Mix a bunch of berries together, use one kind of berry, or create layers with different berries to vary the flavor. Be creative and have fun with your kids making this light and refreshing summertime snack.Â
Yield: makes 10
Ingredients
- 1 cup raspberries
- 1 cup blueberries
- 1 cup blackberries
- 2 cups sliced strawberries
- 6 Tbsp simple syrup (or more according to taste)
- 2 Tbsp lemon juice
Step 1: In a blender or food processor, puree together (or separately) raspberries, blueberries, blackberries, and strawberries. Add simple syrup and lemon juice. Adjust sweetness according to taste. **
Step 2: Divide pureed fruit mixture among popsicle mold cavities. Freeze for at least four hours until firm.
**As alternative, layer the various individual flavors with small chunks of leftover berries to create layers of changing flavors.
