Late June brings warm summer evenings and fresh strawberries picked right from the patch. Eat light with this refreshingly sweet salad to have alongside your favorite cool summer drink.
4 cups cubed cooked chicken
3/4 cup chopped celery
1/3 cup mayo
2 tbsp. lemon juice
1 tbsp. minced fresh mint
3/4 tsp. pepper
2 cups sliced fresh strawberries
1/3 cup slivered almonds, toasted
Can of mandarin oranges
In a bowl, combine chicken and celery. In a small bowl, combine mayonnaise, lemon juice, mint, salt and pepper. Pour over chicken and toss. Refrigerate. Just before serving, fold in strawberries, oranges and almonds.
Optional: Add cup cooked small round pasta.
